Garlic Cream Chicken

Tonight for dinner I made Garlic Cream Chicken. 

I couldn't wait to finish my last bite so that I could blog this recipe. It's SO good. 

If you're a fan of olives, you'll love this dish. The olives, for me, set the bar! 

Recipe Below:
1 cup butter
4 tbs whipping cream
2 cloves garlic, minced
4 tbs lemon juice
green olives, canned (drained)
sun dried tomatoes, canned (drained)
artichokes, canned (drained)
3 or 4 boneless skinless chicken breasts

Melt butter in small sauce pan over low heat, add cream & garlic - cook 1 minute
Stir in lemon juice - remove from heat

In clear glass baking dish, add sauce as bottom layer.
Add un-cooked chicken to dish as 2nd layer.
Top with olives, tomatoes & artichokes.

Cover with lid or tightly with foil.

Bake @ 350 for 30 minutes.

I served with Alessi's Risotto.

Birmingham Zoo

We took Jake to the Birmingham Zoo @ 8 months old. Jared's mom, Gigi, & my Dad, Pop's, came along with us. I was so surprised at how alert he was & willing to have so much fun since this time was his "normal nap time"! Hey, it's the weekend - we can make some changes to the schedule, right?

We love when "dada" is home so he can join in on the fun! Happy Zoo Day Jake!

Alabama Power Family Counts Day!

My sister, Keri, works for Alabama Power. They hosted a "Family Counts Day" @ the Shelby County Airport on Saturday. Nonna came in town to take us & the boys to their 1st fair, if you will. We loaded them up with everything we could possibly thing of. It was so much fun to watch them play & enjoy the sun & music!

Crissy is Keri's direct co-worker. She is due to have a baby soon!

Sitting Up, Juice, & Playing Guitar - All in 1 Week!

Along with celebrating Easter, Jake had some pretty big milestones I thought I needed to blog on!

He is sitting up now all on his own!

Had his 1st sippy cup filled with half & half of apple juice - & LOVED it!


And giving us all his music skills by playing some guitar!

"Mail Makeover"

Mail boxes need a makeover too, right? Last week I took a trip over to my local nursery & picked up a few Spring plants to makeover our front lawn.
